A nail that catches clearly indicates real material loss, and that is a re-polish or a fill, not a touch-up. Check under strong raking light from a low angle, which reveals depth and length far better than overhead light.
Marble and other calcareous stones need one more question, because on those materials the dull mark is more often an etch than a scratch. Marble generally runs 3 to 5 on the Mohs scale and is calcite based, and calcite sits at 3, so acids from citrus, wine, vinegar, and many cleaners chemically dissolve the surface and leave a dull spot with no groove. Etching has to be re-polished or honed out. A concealer applied over an etch will not solve it.

Limits, edge cases, and professional judgment
The clearest limit is the one already stated: light stone is out. A second limit is depth. Concealment works because the product reaches into a shallow fractured zone; a groove with real width and depth holds a visible shadow and a physical edge that no penetrating product changes. There is a point at which the correct answer is a diamond re-polish sequence, and knowing where that point sits is what separates a competent service tech from one who wastes an hour.
Engineered quartz deserves a note even though it appears on the manufacturer's list. It is a dense resin-bound composite with far less open porosity than natural granite, so uptake is limited and results vary more by product than they do on natural stone.
